Summary
In January 2024, the best lakes in central Texas to take my boat an Nimble Artic 26 with a 18" draft on a 30' tandem trailer to launch are :

    Lake LBJ at the Lake LBJ Marina
    Inks Lake
    Lake Marble Falls at Cottonwood creek
    Lake George Town at either Park

Lake Fayette serves as the cooling pond for the Fayette Coal Plant

took a trip out to Lake Fayette this morning. The lake is big and
deep and the power lines don't cross it. The ramp is nice and steep
also. However, there is one big drawback. Because the lake is always
at least 90 degrees (seriously it is very warm) there is a lot of
algae that grows in the water and on the ramp.
