Salon table wood recommendations

OP, cherry is beautiful, one of my favorite woods and super nice to work with(although it wants to chip at the planer);  sand down the last 1/16" and you're golden(carves nicely though).  White oak may be an option for you and it's built sailing ships forever.  Have a white oak double adirondack bench I made prob. 30 yrs ago and it's still great.  Alder is incredibly easy to work with as is black walnut. 

While I love maple for smoking hams I Hate working with it, chips like crazy.  Hope that helps.
